Ingredients

 
4 6-8 0z. pork tenderloins
 
1 T vegetable oil
 
1 T honey
 
2 T low sodium soy sauce
 
1 T cider vinegar
 
1 T ground ginger
 
1/4 t ground cinnamon
 
2 T apricot marmalade
 
3 peaches, peeled and cut into 1/2-inch pieces
 
1/4 c chopped red onion
 
2 T fresh parsley, minced nonfat cooking spray

Directions

Remove any visible fat from the pork.
Place the pork in a flat glass pan.
Combine the oil, honey, soy sauce and vinegar and pour over the pork.
Cover tightly and refrigerate 1-8 hours.
In a large serving bowl, combine the ginger, cinnamon, marmalade, peaches, onion and parsley.
Toss lightly and refrigerate.
Coat the grill with cooking spray and preheat for 5 minutes.
Grill the tenderloins for 4-6 minutes, or according to your preference.
To serve, spoon the salsa over the tenderloins.
