Pork Vegetables And Dumplings Stew Recipe Video

This stew is so pretty, and very easy to make. Its healthy and showcases butternut squash. It makes a great one pot dinner, just add some bread and a salad if you desire...NOTE: the dumplings need baking powder (1 tsp) and I didn't show this on the video (just combine it with the flour)

Ingredients

 
1.5 Tbs olive oil
 
20 small white mushrooms, or 8 large, quartered
 
1/2 lb pearl onions
 
2 lbs pork tenderloin, fat removed and cut into 1.5" chunks
 
1/2 cup chopped red onion
 
3 cups liquid (stock or water or a combination)
 
salt and pepper
 
2 lbs peeled, seeded chopped butternut squash
 
1 Tbs cornstarch
 
1/2 cup cold water
 
1 cup flour
 
1/4 cup cold unsalted butter, cut into small pieces
 
1 tsp baking powder
 
1/2 tsp salt
 
1/2 tsp cracked peppercorns
 
two minced green onions
 
1/2-3/4 cup milk
 
15-20 small broccoli florets

Directions

heat oil in a large cast iron skillet. Saute pearl onions
and mushrooms for about 5 mins, remove to a small bowl and reserve
brown pork add chopped onion and cook 3 mins stirring
add 3 cups liquid and bring to a boil. Lower heat to a simmer and cover cook
45 mins. Dissolve cornstarch in cold water and add to stew, stir. Add squash and
reserved mushrooms and onions. Bring to a boil and simmer 15 mins. In a small
food processor combine flour, baking powder, salt and pepper and green onions - blend
add butter in pulses to cut in. Add enough milk to make a dough. Drop by
heaping teaspoonfuls around edge of stew. Place in a 400 F oven for 10-15 mins.
Remove from oven and nestle broccoli florets in center. Return to oven and cook 10-
15 min or until dumplings start to turn golden brown and broccoli is tender

This sounds yummy-never thought of pork stew with dumplings-Iam stuck in a rut-Grandma's Chicken and Dumplings LOL We use pork tenderloin and loin for stirfries, curries, grilling, pounded and grilled, kababs, etc. Pork is healthy white meat. Putting this in my to try file! I probably will use Vegeta in place of salt-love that seasoning and it is awesome with pork. I've never baked dumplings interesting way to cook them. Must try this. Bet Kabocha squash would be yummy in this-I always grow them in my garden. Do you ever use arrowroot instead of cornstarch? I really like it better for consistency.
