Ingredients
1 pork loin roast
Salt and pepper
Spiced crab apples
Directions
Have meat retailer saw across the rib bones of roast at base of the backbone, separating the ribs from the backbone.
Place roast, fat side up, on a rack in an open roasting pan.
Season with salt and pepper.
Insert meat thermometer in roast so the bulb is centered in the thickest part and not resting on bone or in fat.
Roast in a 350F oven about 2 1/2 to 3 hours, or until thermometer registers 170°F; allow 30 to 40 minutes per pound.
For easy carving, remove backbone place roast on platter, and allow roast to set for 15 to 20 minutes.
Garnish platter with spiced crab apples, heated if desired.
Accompany with Hash Brown Potatoes au Gratin.
