Pork Loin Maison Recipe

Ingredients
1 3-lb (1.5 kg) loin of pork, boned and rolled
1 cup (250 mL) fine breadcrumbs
2 tsp (10 mL) paprika
1 tsp (5 mL) savory
1 tsp (5 mL) salt
1/4 tsp (1 mL) pepper
1/2 tsp (2 mL) garlic powder
2 tbsp (30 mL) melted margarine
1 egg white, lightly beaten
1 tbsp (15 mL) cold water
Directions
Mix together the breadcrumbs, paprika, savory, salt, garlic powder and pepper.
Add the melted mar-garine.
Mix the egg white and the cold water in another bowl.
If you have a combination microwave-convection oven, place a rack in the oven ceramic tray with a pie plate under the rack.
Or follow directions given in your oven operation manual for setting the rack.
Preheat oven at 375°F (190°C).
Roll the roast in the egg white and then in the breadcrumbs mixture.
When the oven is hot, set the roast on the rack and roast at 375°F (190°C) 18 minutes per pound (36 minutes per kg).
When cooked, place the roast on a hot dish, cover and let stand 15 minutes.
To make gravy Add the juice accumulated in the plate, 1/2 cup (125 mL) of either apple juice, cider, cold tea or white wine.
Stir well while scraping the bottom of the plate.
Add 1 tsp (5 mL) cornstarch or flour.
Mix well and microwave 2 minutes at HIGH.
Stir and serve.
