Ingredients

 
1 3-lb. pork loin
 
Salt and pepper
 
Sage to taste
 
Nutmeg to taste
 
1 clove of garlic, crushed
 
1/4 c. chopped parsley
 
1/4 c. chopped onion
 
1 bay leaf
 
2 c. red wine
 
1 c. canned consomme

Directions

Rub pork loin with salt, pepper, sage and nutmeg.
Place roast in small amount of fat in large skillet with crushed garlic; brown on all sides.
Reserve pan drippings.
Place roast in baking dish; add parsley, onion, bay leaf and wine.
Bake at 350 degrees for 2 hours or until tender, turning twice.
Add consomme.
Bake for 20 minutes longer.
Place on platter; stir reserved drippings into wine mixture in roasting pan.
Serve with pork.
