Pork Flekken Recipe
Ingredients
1 3/4 lb. loin of pork

1 tsp. salt
1 dessert spoon flour
Directions
Skin, and cut the meat into five slices; flatten them, then salt and turn them about in flour, roast rapidly over a bright flame until brown.
Decorate the edge of a suitably sized wooden platter with head of sour cabbage, finely sliced, small pickled cucumbers, paprika in vinegar sliced, with green tomatoes preserved in vinegar and with beetroot.
Pile baked potatoes in the middle of the platter and lay the slices of meat on top of them.
