Pork Chops With Piquant Sauce Recipe
Ingredients
2 pork chops
1 tablespoon butter
1 small onion, chopped
2 teaspoons all purpose flour
7/8 cup stock
2 teaspoons tomato ketchup
2 teaspoons brown sauce
2 midget gherkins, sliced
Salt and pepper
Directions
Cook the chops under a preheated moderate grill (broiler) for 15 minutes on each side.
Melt the butter in a pan and saute the onion for 5 minutes.
Stir in the flour and cook for 1 minute.
Remove from the heat and gradually add the stock, ketchup and brown sauce.
Heat, stirring, until the sauce comes to the boil.
Add the gherkins and salt and pepper to taste and heat through for 2 to 3 minutes.
Place the chops on a warmed serving dish and pour over the sauce.
Serve with rice and a green vegetable.
Cooking time: 40 minutes Variation: Lamb or veal chops can be used as an alternative with the piquant sauce.
