Pork And Sweet Potato Bake Recipe
Ingredients
6 loin, rib, or shoulder pork chops, cut 1/2 inch thick
2 cans (1 pound each) sauerkraut
1/8 teaspoon dry mustard
1/4 cup water
6 raw medium-size sweet potatoes, pared and sliced lengthwise
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup apricot jam
1/4 teaspoon ginger
Directions
1 Trim any excess fat from chops with sharp knife.
2 Heat large frying pan; rub with piece of cut-off fat; brown chops on both sides in pan; save for Step 4.
3 Spread undraineU sauerkraut in bottom of 2-quart baking dish; sprinkle with dry mustard and water.
4 Arrange sweet-potato slices around edge; place browned chops in center; sprinkle with salt and pepper.
5 Combine apricot jam and ginger; spread over sweet potatoes.
6 Bake, covered, in moderate oven (350°) 1 hour, or until chops and potatoes are tender when tested with a fork.
