Pork And Peanuts Recipe
This Pork and Peanuts dish is rich and filling and leaves you wishing you had prepared more of it. The nuts compliment the cooked pork and add to the flavor of the dish.
Ingredients
| Peanuts | 1/2 Pound, uncooked | |
| Salt | 1 Teaspoon | |
| Oil | 1 Teaspoon | |
| Lean pork | 1 Pound | |
| Cornstarch | 1 Teaspoon | |
| Soy sauce | 1 Tablespoon | |
| Sherry | 1 Tablespoon | |
| Garlic | 1 Clove (5gm) | |
| Oil | 2 Tablespoon | |
| Mushrooms | 4 Ounce | |
| Celery stick | 2 | |
| Scallions | 2 | |
| Oyster sauce | 1 Tablespoon | |
| 3/4 cup stock or water | ||
Directions
Shell the nuts, sprinkle with salt and fry in the oil for 2-3 minutes.
Drain on kitchen paper.
Cut the pork into shreds; add the cornflour (cornstarch), soy sauce and sherry.
Crush the garlic, add to the meat and mix well.
Heat the oil in another pan and fry the meat quickly, stirring all the time, for 2 minutes.
Wash and slice the mushrooms; wash and thinly slice the celery; chop the spring onions (scallions).
Add the vegetables to the pan with the oyster sauce, nuts and stock or water.
Cook for 3 minutes.
