Ingredients
3 tablespoons oil
2 onions finely chopped
1 1/2 pounds lean pork, cut into 1 1/2 inch cubes
1/2 cup seasoned flour
Grated rind and juice of 1 orange
11 ounce can mandarin oranges
1 cup water
1 chicken bouillon cube
1 green pepper, sliced
Directions
Heat the oil in a 2-quart glass or ceramic casserole on the highest setting for 20 seconds.
Add the onions and cook for 2 minutes.
Add pork coated in seasoned flour.
Cook in hot fat for a few seconds to seal in juices.
Toss to seal.
Grate rind.
Squeeze the orange.
Drain the mandarin oranges.
Mix the syrup from the can with the fresh juice.
Combine syrup and juice with water, rind, bouillon cube, and sliced pepper in a small glass or ceramic bowl.
Cook on simmer setting for 5 minutes.
Add to pork.
Cover and cook for 20 minutes on roast setting.
Rotate dish one-quarter of a turn after 10 minutes.
Add the mandarin oranges during last 5 minutes.
Let stand for 10 minutes before serving.
