Pork Ribs And Apple Pie Recipe
Ingredients
2 medium country style pork ribs
2 tablespoons margarine
1 small onion, sliced
2 small carrots, sliced
1 medium apple, peeled, cored and sliced
2/3 cup chicken stock
1 x 7 1/2 oz can butter beans, drained
Sprig of rosemary
1/2 teaspoon dried thyme
Salt and pepper
Chopped parsley for garnish
Directions
Cut the meat from the chops (ribs) into cubes.
Melt the margarine in a pan and fry the meat until browned all over.
Add the onion and carrots and fry gently until soft, then add the apple and cook for 2 minutes.
Stir in the stock, butter beans, rosemary, thyme, salt and pepper to taste.
Bring to the boil, cover and simmer for 30 minutes.
Adjust the seasoning and transfer to a warmed serving dish.
Garnish with parsley and serve with rice and a green salad.
