Ingredients
| 2 lb boneless shoulder pork | ||
| Dried apricots | 8 Ounce | |
| Marsala | ||
| Pineapple juice | 1 Cup (16 tbs) (Marinade:) | |
| Soy sauce | 1/2 Cup (16 tbs) (Marinade:) | |
| Garlic | 1 Clove (5gm), crushed (Marinade:) | |
| Chopped ginger | 2 Teaspoon, preserved (Marinade:) | |
Directions
Cut pork into 1 1/2 inch cubes and place in a mixing bowl, pour over marinade, mix well and cover.
Stand for 1 hour.
Drain meat and apricots and place alternately on skewers.
Barbecue over hot coals for approximately 20-25 minutes or until meat is tender.
Turn frequently and baste with the marinade while cooking.
Place dried apricots in another bowl, cover with marsala and stand for 1 hour.
