Directions

1. Wash the watercress well and drain. Cut off the bottoms of the stems. Soak in cold salted water to cover thirty minutes. Drain, rinse in fresh water and dry gently.
2. In a skillet heat the oil, add the garlic and pork and brown the meat quickly on all sides.
3. Add the soy sauce and watercress. Cook, stirring, until the mixture reaches a boil. Cover and cook two minutes longer.
