Ingredients

 Bacon strip4 , diced
 Carrot1
 Large onion - 1, sliced
 Butter2 Tablespoon
 Red cabbage - 2 pounds, cut into 1/2-inch strips
 Tart apples - 2, diced
 Garlic1 Clove (5gm), mashed
 Bay leaf1
 Clove1/8 Teaspoon
 Nutmeg1/8 Teaspoon
 Salt1/2 Teaspoon
 Pepper1/4 Teaspoon
 Red wine2 Cup (16 tbs)
 Beef bouillon - 2 cups
 Boneless roast of pork - 3 pounds
 Vegetable oil2 Tablespoon

Directions

GETTING READY
1. Preheat oven moderate to 325°F.

MAKING
2. In a pan add diced bacon in 1 quart water and simmer for about 10 minutes.
3. Drain out bacon.
4. In a covered ovenproof casserole heat butter and fry bacon, carrot, and onion over low heat for 10 minutes. Do not let it brown.
5. Add cabbage strips and mix with other vegetables.
6. Cook covered slowly for 15 minutes.
7. Add remaining ingredients except meat and vegetable oil.
8. Simmer for 2 to 3 minutes on top of range.
9. Cover and cook in oven. Simmer for 3 hours.
10. In a pan heat oil and brown pork roast.
11. Just before cabbage is cooked add pork in casserole with cabbage.
12. Cover and cook over simmering heat for 2 hours.
13. Adjust seasonings.

SERVING
14. Serve hot.
