 Packed brown sugar1 /4 Cup (16 tbs)
 Butter/Margarine1 /4 Cup (16 tbs), melted
 Cider vinegar1 Tablespoon
 Salt1 Teaspoon
 Garlic powder1 /2 Teaspoon
 Pepper1/2 Teaspoon
 Apples2 Medium, sliced
 Sweet potatoes2 Medium, thinly sliced
 Onion1 Medium
 2 pork tenderloins (1 lb each)

Directions

GETTING READY
1 Heat the oven to 425 degrees farenheit.

MAKING
2 In a medium bowl mix brown sugar,butter,vinegar,salt,garlic powder and pepper.Keep 2 tablespoons of this mixture aside.
3 Add apples,sweet potatoes and onion to the butter mixture.Toss to coat.
4 In a roasting pan or 13x9 inch (3 quart) glass baking dish, spread the apple mixture.Cover tightly with foil and bake for 20 minutes.
5 In the meantime,brush pork with the reserved butter mixture.
6 Heat a 10-inch nonstick skillet over medium high heat.Cook pork in the skillet for about 3 minutes turning ocassionally to brown all the sides evenly.
7 Place pork on the apple mixture and bake uncovered for 30-40 minutes or till the pork has a slight blush of pink in the centre.


SERVING
8 Serve hot.
