Pork Tenderloin with Apple Dressing Recipe
|Pork tenderloin/Boneless pork loin, rib portion||1 1⁄2 Pound|
|For apple dressing|
|Fine dry bread crumbs||1 1⁄2 Cup (24 tbs)|
|Applesauce||1⁄2 Cup (8 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted|
|Raisins||1⁄4 Cup (4 tbs)|
|Freshly ground pepper||1 Pinch|
|Freshly ground pepper||To Taste|

Place both halves between 2 sheets of waxed paper and flatten with mallet.
Sprinkle with salt and pepper to taste.
Apple Dressing: Combine all ingredients, mixing thoroughly.
Spread over 1 piece of tenderloin; place other half on top and tie halves together with string in several places. (Recipe can be prepared ahead to this point, covered and refrigerated.)
Place on rack in pan and roast, uncovered, in 350°F (180°C) oven for about 1 hour or until fork-tender.
