Ingredients

 
Pork:
 
pork tenderloin
 
1/2 cup apple juice (or cider)
 
1/4 cup shoyu (or soy sauce)
 
1/4 cup honey
 
pinch of salt
 
red chili flakes to taste
 
2 cloves garlic, chopped with salt into a paste
 
2 inch piece of ginger, peeled and grated
 
juice of 1 lemon
 
olive oil, generous amount
 
Apples:
 
5 Fuji apples, core and halved
 
5 tbsp butter, cubed
 
zest of 1 orange
 
juice of 1 orange
 
10 whole cloves
 
6 star anise pods
 
3 short cinnamon sticks
 
1/4 cup of pistachio, roughly chopped
 
1/2 cup brandy

Directions

Marinade pork tenderloin with apple juice, soy sauce, honey, salt, chili flakes, garlic, ginger, lemon juice and olive oil on a dish. Cover this and chill for at least 20 mins to 2 hr.

Place the apples on aluminum foil. Put butter cubes inside the apples. Sprinkle the orange zest on top. Add orange juice on top. Sprinkle cloves,star anise,cinnamon and pistachio sticks on the apples. Pour brandy on top. Fold the aluminum foil from both the sides and lock the edges.

Preheat the grill. Bring the pork out from refrigerator and let it come to normal temp. Put the apples packed in foil near the hot side of the grill. Grill the pork on low heat. Cover the grill for 6-7 mins. Flip the meat and grill the other sides, each for 6-7 mins. Fold the grilled pork in aluminum foil.

Slice the grilled pork and serve with baked apple.
