 Pork butterfly steaks6
For apple stuffing
 Butter1 Ounce (30 Grams)
 Onion1 , finely chopped
 Bacon rashers2 , finely chopped
 Apple1 , cored and finely chopped
 Stale bread crumbs3 Ounce (1 1/2 Cups / 90 Grams)
 Egg1 , lightly beaten
 Mozzarella cheese5 Ounce, cut into small cubes (155 Grams)
 Chopped fresh parsley2 Tablespoon
 Freshly ground black pepper1

Directions

1. Place butterfly steaks on a board and, using a meat mallet, flatten slightly.
2. To make stuffing, melt butter in a frying pan and cook onion and bacon for 4-5 minutes or until bacon is crisp. Add apple and cook until apple is soft. Place apple mixture in a bowl, add bread crumbs, egg, mozzarella cheese and parsley and mix to combine. Season to taste with black pepper.
3. Preheat barbecue to a medium heat. Place spoonfuls of stuffing on one side of each butterfly steak, then fold over and secure with toothpicks. Cook on lightly oiled barbecue for 5-6 minutes each side or until steaks are cooked.
