Ingredients

 
3 pound pork shoulder roast, deboned
 
1/2 pound Italian Sausage
 
1 bunch spinach, or 1 package frozen leaf spinach
 
Salt and pepper to taste
 
2 eggs, hard-boiled and sliced
 
1/2 pound ricotta cheese or 1/2 pound small curd cottage cheese, well drained
 
1 medium yellow onion, peeled and chopped
 
Olive oil for frying

Directions

Lay the pork roast out flat, fat side down, and decide whether you can fill it and roll it like a jelly roll or whether you must cut some of the meat from the center so that you have room for a stuffing.
Wash, chop, and quickly fry the spinach in olive oil.
Drain.
Salt and pepper the meat.
Place the sausage, spinach, eggs, cheese, and onion in the center of the roast.
You may not need all the fillings, depending on how the meat is cut; just use what you can, and save the rest for another dish.
Roll up the roast, and tie it like a jelly roll.
Place it on a baking rack, and bake at 350° for about 1 hour and 15 minutes, or until golden on the outside.
Slice thin across the roll, and serve.
A salad and wine along with some buttered noodles make a fine meal.
