Ingredients
1 4 rib pork loin
Salt and pepper
2 tbsp shortening
1 onion, chopped
1 shallot, chopped
2 carrots, diced
1 turnip, diced
1 tbsp all purpose flour
14 oz canned lentils, rinsed, drained
1 celery stalk, diced
1 garlic clove, chopped
1/4 cup solid pork fat, diced
1 herb boutniet water
Directions
Preheat oven to 350 °F (175 °C).
Season pork loin with salt and pepper.
Place in casserole dish.
Roast in oven 75 minutes.
Meanwhile, in a covered saucepan, melt shortening.
Lightly brown onion, shallots, carrots and turnip.
Sprinkle with flour, mixing well.
Add lentils, celery, garlic, diced lard and herb bouquet.
Season to taste with salt and pepper.
Cover mixture with water.
Simmer uncovered 20 minutes.
Set aside.
Approximately 15 minutes before the end of cooking, surround pork rack with lentil mixture.
