 Butter1 Ounce
 1 large onion, sliced, 3 sticks celery, chopped
 1/2 cucumber, diced, 14 oz (400 g) can chopped tomatoes
 1/2 tsp mixed herbs, 1/2 tsp sugar
 Black pepper salt1 To taste
 Pork chops4
 Sprigs of parsley

Directions

GETTING READY
1. Turn the oven to Oven 375°F/190°C/Gas 5

MAKING
2. In a pan, heat oila dn butter and fry onions and celery till soft; add cucumber, tomatoes, herbs, sugar and seaosning to it
3. Allow to come to a boil and add to a shallow ovenproof dish
4. Lay the chops on top of it and cook for fifty minutes till the chops are tender

SERVING
5. Garnish with parsley and serve
