Pork Pot Pie Recipe

1 pound pork chops
2 green peppers
4 medium white potatoes
1 small onion (optional)
Salt to taste
Dumplings:
2 cups flour
1/3 cup shortening
1/2 teaspoon salt
1/4 cup water (plus 2 tablespoons, if needed)
Directions
1) Cut meat in 1 1/2 inch pieces. Cut 1 green pepper into 1/2 inch squares. Mix with chopped onion and salt, place in dutch oven with 1 quart water.
2) Bring to a boil on top of the stove, then cook covered over medium heat for 1 hour. Add potatoes cut into 1 1/2 inch pieces.
3) Meanwhile, for dumplings, mix flour, shortening, salt and water. Mix well and cut into 2-inch squares. Add with chopped green pepper. Cook covered 20 minutes.
