2 tbs (30 ml) vegetable oil
2 lbs (910 g) lean pork, cut into 1/2-inch cubes
1 1/2 cups (355 ml) chopped onion
4 cloves garlic, minced
2 cups (480 ml) water
8-oz pkg Blue or White Posole
7-10 Dried Red Chile de Arbol, rehydrated and chopped
1 tbs (15 ml) chopped fresh thyme
1 tbs (15 ml) chopped fresh oregano
2 bay leaves
1 tsp (5 ml) cumin seed
1/2 tsp (3 ml) salt
1/4 tsp (1 ml) pepper salsa or red chile sauce, of choice shredded green cabbage
Directions
In a Dutch oven heat oil; saute meat with onion and garlic for 10 minutes or until browned.
Drain off excess fat.
Add water, posole, chiles, thyme, oregano, bay leaves, cumin seed, salt and pepper.
Bring to a boil; reduce heat.
Simmer, covered, for 2-3 hours or until pork and posole are tender.
