Ingredients
1 lemon
3 tablespoons fine unseasoned breadcrumbs
3 tablespoons grated Parmesan cheese
1 1/2 teaspoons oregano
1/2 teaspoon pepper
1 egg white
4 boneless pork cutlets (about 1/4 inch thick, 1 1/4 pounds total)
1 tablespoon butter
2 tablespoons vegetable oil
Directions
1 Cut the lemon into wedges and set aside.
2 In a shallow bowl, combine the breadcrumbs, Parmesan, oregano and pepper. In another shallow bowl, beat the egg white until frothy.
3 Dip the pork cutlets into the egg white, just to coat lightly. Then dip the cutlets into the seasoned breadcrumbs.
4 In a large skillet, warm the butter in 1 tablespoon of the oil over medium-high heat until the butter is melted. Add the pork and cook until golden brown and cooked through, about 3 minutes per side. Add the remaining 1 tablespoon oil, if necessary, to prevent sticking.
