1 medium-size onion, chopped
 
1 1/2 tablespoons salad oil or lard
 
2 cups finely diced or shredded, cooked lean pork, chicken, or turkey
 
1 small canned jalapeno chile or other pickled, very hot chile, minced
 
1/4 cup raisins
 
11/2 tablespoons chopped ripe olives
 
2/3 cup Mexican red chile sauce or canned enchilada sauce

Directions

In a wide frying pan over medium-high heat, cook onion in oil until limp.
Stir in meat, chile, raisins, olives, and chile sauce.
Simmer, uncovered, for 10 minutes, stirring occasionally, to blend flavors.
