Pork Noisettes Waldorf Recipe

Ingredients

 
1 lb (450 g) pork filet
 
1 tbsp (15 ml) peanut oil
 
1 tbsp (15 ml) butter
 
4 French (dry) shallots, finely sliced
 
1 apple, peeled and sliced
 
1/4 Cup (60 ml) walnut halves
 
2 tbsp (30 ml) Cognac or Calvados
 
Salt and pepper
 
1/3 Cup (80 ml) 35% cream

Directions

–  Preheat oven to 275 °F (130 °C).
–  Cut pork filet into 1/2 inch (1 cm) thick, oval slices (noisettes).
–  In a skillet, heat oil, melt butter and saute pork noisettes, then place in a serving dish and keep warm.
–  Using the same skillet, saute shallots, apple and walnut halves, deglaze with Cognac or Calvados, then season with salt and pepper. Add cream, cook over low heat and stir until mixture is smooth, without letting the sauce boil.
–  Pour sauce over pork noisettes
