Ingredients
| Pork loin roast | 2 Pound, rolled | |
| Ground cumin | 1/2 Teaspoon | |
| Butter | 4 Tablespoon | |
| Cheese | 2 1/2 Cup (16 tbs), grated | |
| Prepared mustard | 1/4 Cup (16 tbs) | |
| Heavy cream | 1/3 Cup (16 tbs) | |
| Calvados | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Season the pork loin with the salt, pepper and cumin.
Melt the butter in a heavy casserole and brown the meat on all sides.
Mix the cheese with the mustard and 1/4 cup [50 ml.] of the cream, and spoon the mixture over the meat.
Roast under the broiler or in a preheated 425° F. [220° C] oven, until brown, about 30 to 40 minutes.
Place the meat on a warmed dish, deglaze the casserole with the Calvados, and stir in the remaining cream.
Cook over high heat, stirring all the time, until the sauce thickens slightly, then pour the sauce over the meat.
