Pork Knuckle 1 Recipe Video
On a recent episode of "No Reservations" on the travel channel they were in Prague. They showed something that looked really good, pork knuckle or pig's knuckle. I've been looking in my area for anything similar, the closest I could find is a small fresh picnic. It turned out pretty good, next time I think I'll let it go longer. I was afraid that if it got to the "fall off the bone" stage it would "fall off the spit". Maybe next time I'll secure it with a ham bag.

| Kosher salt | 1 Cup (16 tbs) |
Directions
MAKING:
1)Cut the pork skin off and cut scores into the skin. Apply salt liberally.
2)Place on the rotisserie skewer and secure the meat.
3)Get the rotisserie ready.
4)Cook on the rotisserie at 160 degrees for 3 hours.
SERVING:
5)Meat can be used in your choice of recipes.

Use apple wood chips for added flavor and aroma.
