Ingredients
| Pork shoulder | 1 1/4 Pound | |
| White wine or cider - 1/4 pint | ||

Directions
GETTING READY
1) Chop the onions and keep aside.
MAKING
2) Take a casserole and place the pork into it.
3) Add onions, wine, bay leaf, thyme, parsley and seasoning.
4) Cover the casserole and cook for 1 1/2 hours at 325°F, 170°C, Gas Mark 3,
5) Take out the herbs and strain the liquid.
6) Take a pan and melt butter.
7) Add flour and cook for 2 minutes.
8) Mix 1/2 pint milk with meat juices and add to the roux mixture.
9) Pour this mixture over the meat. Now add mushrooms and keep the casserole in the oven for 20 minutes.
SERVING
10) Serve the dish in a serving bowl.
