Pork Fillets In Apricot Mango Sauce Recipe
Ingredients
| 2 x 200 g pork fillets | ||
| Butter | 30 Gram | |
| APRICOT MANGO SAUCE | ||
| Mango | 1 Small, chopped | |
| 425 g can unsweetened apricot halves | ||
Directions

Using sharp knife, cut away any fat from pork.

Heat butter in frying pan, add pork; cook over high heat, turning often, until pork is lightly browned all over.
Reduce heat, cook for further 10 minutes, uncovered, or until pork is tender; turn pork during cooking.

Apricot Mango Sauce: Chop mango flesh; you need 3/4 cup flesh for this recipe.
Drain apricots, reserve 1/2 cup juice.
Combine apricots, reserved juice and mango in blender or processor, blend until smooth.
Heat sauce in small saucepan, without boiling, over low heat; serve with sliced pork and a green vegetable.
Boiled rice would also be a good accompaniment.
