Ingredients
1 oz. lard or butter
1/2 tsp. salt
4 peppercorns
1 large onion, chopped
4 Tbs. chopped gherkins
1 Tbs. flour
1 tsp. French mustard
1/2 pt. stock
4 pork cutlets
1/4 pt. white wine or cider
Directions
Melt the fat in a saucepan and add the onion.
Cook until tender, without browning.
Add the flour and mix well.
Cook until yellow.
Add the stock and wine or cider and the salt and peppercorns.
Boil gently for 30-40 minutes.
Just before serving add the gherkins and mustard.
Grill or fry the cutlets for 20-25 minutes.
Put on a dish and pour the sauce over.
