4 pork chops (3/4 inch thick)
1 Tbsp. oil
1/2 lb. fresh mushrooms, sliced
1 medium onion, sliced
2 Tbsp. butter
2/3 cup dry vermouth
2/3 cup water
3/4 tsp. salt
1/2 tsp. chervil
1/8 tsp. black pepper, freshly ground
1/4 cup water
1 Tbsp. cornstarch
1/4 cup parsley, chopped
Directions
In large skillet, brown the chops in 1 tablespoon oil.
Remove and drain off fat.
Saute mushrooms and sliced onion in butter over medium heat for 2 minutes.
Return chops to pan and add vermouth, 2/3 cup water, salt, chervil and pepper.
Simmer, covered, 45 minutes or until meat is tender.
Remove chops and place on serving dish.
Keep warm.
Blend the 1/4 cup water and cornstarch.
Stir into mushroom mixture.
Cook and stir until sauce boils about 1/2 minute.
Stir in the parsley.
Pour sauce over chops.
