Directions

Season the chops liberally with salt and pepper.
Place in a large shallow oven proof dish and cook in a preheated moderately hot oven, 190°C (375°F), Gas Mark 5, for 30 minutes.
Drain off any excess fat and turn the chops over.
Meanwhile, make the sauce.
Heat the oil in a pan, add the onion and garlic and fry gently until soft.
Add the remaining ingredients, bring to the boil and simmer for 15 minutes.
Pour over the chops and return to the oven for 20 minutes, until tender.
Serve, garnished with parsley.
