Ingredients
4 thick pork chops
1/4 teaspoon powdered ginger
1 teaspoon salt
Freshly ground black pepper
2 tablespoons butter
2 small onions, finely chopped
1 teaspoon tomato paste
1/2 cup red wine
8 canned apricot halves
3 tablespoons fine dry breadcrumbs
1 tablespoon butter
Directions
Season the chops with ginger, salt and pepper.
Fry the chops in the butter over high heat until evenly browned.
Place the chops in an ovenproof dish and surround with the chopped onions.
Discard the fat from the frying pan and add the tomato paste and wine.
Pour this mixture over the pork chops.
Cover with apricot halves, sprinkle with breadcrumbs and dot with butter.
Cook in a preheated 325° oven for 45 minutes.
