Pork Chops Piquant Recipe

4 pork loin chops, 1 inch thick
1/4 cup water
1/4 teaspoon bottled brown bouquet sauce
1/2 teaspoon salt
Freshly ground pepper
1/2 cup Chicken
Stock
1/4 cup dry white wine
1 green pepper, chopped
1 medium yellow onion, chopped
2 tablespoons capers, drained
Watercress or parsley sprigs
Directions
1. Trim excess fat from chops. Brush chops lightly with a mixture of water and brown bouquet sauce. Brown chops lightly on both sides in a nonstick skillet over medium heat. Sprinkle with salt and pepper.
2. Add stock and wine. Simmer, covered, 30 minutes. Skim fat from liquid. Stir in green pepper, onion, and capers. Simmer, uncovered, 10 to 15 minutes until vegetables are just tender. Taste vegetables and sauce; adjust seasoning.
