Pork Chops Neapolitan Style Recipe

Ingredients
1/2 cup olive oil
1 clove garlic, crushed
8 loin pork chops
1/2 teaspoon salt
1/2 teaspoon pepper
2 large sweet peppers
1 (1-pound) can tomatoes
1/2 pound mushrooms, sliced

Directions
1. Heat oil in a frying pan and saute garlic until brown. Discard garlic and add pork chops.
2. Add more oil if necessary and brown on both sides till almost done, about 5 minutes on each side. Sprinkle lightly with salt and pepper and simmer gently.
3. Cut the peppers in half, discard cores and seeds, and cut the flesh into thin strips.
4. Take the meat from the pan and keep hot. Add peppers and tomatoes and cook over a medium heat for 20 minutes. Stir in the mushrooms, cover the pan, and simmer a few more minutes.
5. Return chops to sauce and heat thoroughly
