3/4 teaspoon ground allspice
2 bay leaves, finely crushed or ground in a spice grinder
1/2 teaspoon each sugar and salt
1/4 teaspoon each ground cinnamon, ginger, and black pepper
4 loin pork chops, about 1/2 inch thick (5 ounces each)
Directions
1 In a small bowl, combine the allspice, bay leaves, sugar, salt, cinnamon, ginger, and pepper.
Rub the mixture into both sides of each pork chop; wrap the chops in plastic food wrap and marinate in the refrigerator for at least 6 hours or over night.
