| 4 loin or rib pork chops | ||

| Pepper | 1/4 Teaspoon | |
| Flour | 1 Tablespoon | |
| Water | 1 Cup (16 tbs) | |
| Raisins | 3/4 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| 2 apples, peeled and quartered | ||
| 2 sweet potatoes, peeled and quartered | ||
Directions
Trim fat from chops; render some in frying pan to coat lightly; discard excess fat.
Rub meat with salt and pepper.
Saute pork until browned on both sides.
Remove chops from pan.
In the same pan, add flour and mix until blended.
Gradually stir in water, raisins, and lemon juice.
Simmer 5 minutes.
Layer half of the apples and potatoes in a greased 2-quart casserole.
Place chops on top.
Layer remaining apples and potatoes over chops and pour sauce over all.
Cover and bake in a moderate oven (350°) for 1 hour, or until meat is tender.
Makes 4 servings.
