Pork Chop Sweet Potato Casserole Recipe
Ingredients
| 2 thick pork loin chops, trimmed of excess fat | ||
| 4 small sweet potatoes, cut into 1/4-inch [6-mm.] slices | ||
| Butter | 1 Tablespoon | |
| Salt | 3/4 Tablespoon | |
| Coarsely ground black pepper | ||
| 1 large cooking apple, peeled, quartered, cored and sliced | ||
| 2 medium-sized onions, sliced | ||
| Light brown sugar | 1 Tablespoon | |
| 1 lemon, the peel grated and the juice strained | ||
| Hot water | 1 Tablespoon | |
Directions
Preheat the oven to 350° F. [180° C.].
Butter a 1-quart [1-liter] baking dish and put in the sweet potatoes.
Dot with butter and sprinkle with the salt and a dash of pepper.
Make a layer of the apple and onion slices on top.
Combine the brown sugar with the lemon juice and peel, and spread the mixture over the apples and onions.
Add the hot water and then the pork chops.
Cover the dish and bake until the chops are very tender, or for about one and a half hours.
Remove the cover for the last 30 minutes to brown the chops.
