Pork Chop Barbecue Recipe

Ingredients
1/2 cup water
3 tablespoons vinegar
2 tablespoons sugar
1 tablespoon prepared mustard
1/4 teaspoon salt
1/4 to 1/2 teaspoon black pepper
1/8 teaspoon ground red pepper
1 slice lemon
1 medium onion, sliced
1/2 cup catsup
2 tablespoons Worcestershire sauce
1 to 2 teaspoons liquid smoke
6 pork rib chops, 3/4 inch thick
1 to 2 tablespoons cooking oil
Directions
1 For sauce, in a small saucepan combine water, vinegar, sugar, mustard, salt, black pepper, and red pepper. Add lemon slice and onion. Bring mixture to boiling; reduce heat. Simmer, uncovered, for 20 minutes. Stir in catsup, Worcestershire sauce, and liquid smoke. Return to boiling. Remove from heat; discard lemon slice.
2 In a large skillet brown pork chops, half at a time, in hot oil over medium-high heat. Place pork chops in a 3-quart rectangular baking dish; pour sauce over top.
3 Bake chops, uncovered, in a 350° oven for 25 to 30 minutes or until pork chops are slightly pink in the center and juices run clear, turning chops once. Remove chops to a serving platter. Pour sauce over all.
