Pork And Sausage Stew Recipe
Ingredients
| Onions | 1 1/2 Pound | |
| Lard | 1/4 Cup (16 tbs) | |
| 6 Thin cut pork loin chops | ||
| 1 lb Coarse pork sausage links | ||
| Flour | 2 Tablespoon | |
| Chicken broth | 2 Cup (16 tbs) | |
| Tomato Paste | 3 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Peel and thinly slice the onions.
Heat the lard in a flameproof casserole, add the onions and fry gently for 10 minutes till pale golden.
Meanwhile, wipe the chops and remove the bones and any excess fat.
Twist the sausages in half.
Sprinkle flour over the onions and cook for 1 minute.
Gradually add the broth and bring to a boil, stirring.
Stir in the tomato paste.
Add the chops and sausages.
Bring to a boil, cover and simmer for 1 1/4 hours, or cook in the oven preheated to 350°, for 1 1/4 hours.
Adjust the seasoning to taste, then serve immediately with buttered pasta and a green salad.
