12 ounces boneless pork shoulder, trimmed and cut into 3/4 inch cubes
 
3 tablespoons all-purpose flour
 
4 teaspoons canola or olive oil
 
1 medium-size yellow onion, finely chopped
 
4 cloves garlic, slivered
 
2 teaspoons minced fresh ginger or 3/4 teaspoon ground ginger
 
3 tablespoons red wine vinegar
 
2 tablespoons light corn syrup
 
1 can (14 1/2 ounces) low-sodium tomatoes, chopped, with their juice
 
2 tablespoons low-sodium ketchup
 
1/2 teaspoon each ground ginger and allspice
 
1/4 teaspoon black pepper
 
2 cups cooked red beans

Directions

1 Dredge the pork in the flour, shaking off any excess.
In a 5-quart Dutch oven or large heavy saucepan, heat 2 teaspoons of the oil over moderately high heat.
Add the pork; saute for 5 minutes or until lightly browned all over.
2 With a slotted spoon, transfer the meat to a plate.
Lowerthe heat and add the remaining 2 teaspoons of oil, the onion, garlic, and fresh ginger.
Cook, stirring frequently, for 5 minutes or until the onion is softened.
Return the meat to the Dutch oven and stir in the vinegar, corn syrup, tomatoes, ketchup, ground ginger, allspice, and pepper.
Bring to a boil over moderate heat, then lower the heat, cover, and cookfor 50 minutes.
Add the beans, cover, and simmer 20 minutes longer or until the meat is tender
