Ingredients
12 ounces boneless pork shoulder, trimmed and cut into 3/4 inch cubes
3 tablespoons all-purpose flour
4 teaspoons canola or olive oil
1 medium-size yellow onion, finely chopped
4 cloves garlic, slivered
2 teaspoons minced fresh ginger or 3/4 teaspoon ground ginger
3 tablespoons red wine vinegar
2 tablespoons light corn syrup
1 can (14 1/2 ounces) low-sodium tomatoes, chopped, with their juice
2 tablespoons low-sodium ketchup
1/2 teaspoon each ground ginger and allspice
1/4 teaspoon black pepper
2 cups cooked red beans
Directions
1 Dredge the pork in the flour, shaking off any excess.
In a 5-quart Dutch oven or large heavy saucepan, heat 2 teaspoons of the oil over moderately high heat.
Add the pork; saute for 5 minutes or until lightly browned all over.
