Pork And Peanut Stir Fry Recipe

Pork and peanut stir fry has a very asian taste to it. Made with lean pork strips, the pork and peanut stir fry is a skillet cooked recipe. Spiced with ginger root and garlic powder, the pork is cooked along with sliced vegetables and finished with roasted peanuts mixed together with it.

 1/4 pound boneless lean pork
 Cornstarch4 Teaspoon, divided
 3 tablespoons Lite Soy Sauce, divided
 1 teaspoon minced fresh ginger root
 Water1/2 Cup (16 tbs)
 White distilled vinegar2 Teaspoon
 Garlic powder1/4 Teaspoon
 Vegetable oil2 Tablespoon, divided
 Onion1 Medium, sliced
 1 medium carrot, cut diagonally into 1/8 inch-thick slices
 2 medium zucchini, cut diagonally into 1/8 inch-thick slices
 Unsalted roasted peanuts1/3 Cup (16 tbs)

Directions

Cut pork across grain into thin slices, then into strips.
Combine 2 teaspoons each cornstarch and lite soy sauce with ginger in small bowl; stir in pork.
Let stand 15 minutes.
Mean while, combine water, remaining 2 teaspoons cornstarch, 2 tablespoons plus 1 teaspoon lite soy sauce, vinegar and garlic powder; set aside.
Heat 1 tablespoon oil in hot wok or large skillet over high heat.
Add pork and stir-fry 2 minutes; remove.
Heat remaining 1 tablespoon oil in same pan.
Add onion and carrot; stir-fry 2 minutes.
Add zucchini; stir-fry 2 minutes.
Stir in pork and soy sauce mixture.
Cook and stir until mixture boils and thickens.
Stir in peanuts; serve immediately with rice.
