4 ounces Chinese egg noodles or fine noodles, broken in half
 
1/4 cup soy sauce
 
2 tablespoons rice vinegar or vinegar
 
1 tablespoon salad oil
 
1 tablespoon honey
 
1 teaspoon sesame oil
 
1 10 ounce package frozen cut asparagus
 
1 large carrot, cut into thin strips
 
1 cup bean sprouts
 
8 ounces cooked lean pork, cut into thin strips
 
1/4 cup thinly sliced green onion

Directions

Cook the noodles according to package directions; drain.
Cover the noodles with ice water and let stand till thoroughly chilled.
Drain well.
Meanwhile, for dressing, in a screw top jar combine soy sauce, rice vinegar or vinegar, oil, honey, and sesame oil, if desired.
Cover and shake to mix well.
Chill.
Cook asparagus according to package directions; drain.
Arrange noodles on a large serving platter.
Arrange asparagus and carrot in a circle atop noodles.
Place bean sprouts and pork in center of carrot and asparagus ring.
Sprinkle with green onion.
Cover and chill 2 to 24 hours.
