Ingredients
3/4 lb. flour
5 oz. butter or 4 oz. lard
1/2 oz. yeast with a tbsp. milk
Pinch of salt
2 tbsp. sour cream
Directions
Make a light pastry of these ingredients.
Let it stand for 15 mins., cut in two and roll out each half to the thickness of a matchstick.
Fill one with poppy seed, and the other with walnut filling.
Walnut filling: Make a syrup of 5 oz. sugar, and 2-3 tbsp. milk.
Add 7 oz. ground walnuts, a little grated lemon peel and two or three spoonfuls apricot or apple jam; alternatively one or two pared and grated raw apples.
Poppy seed filling: Make a syrup of 5 oz. sugar and 1-1 1/2 gills of milk, add ground poppy seeds and boil.
Remove from heat and stir in grated rind of lemon, one or two spoonfuls of apple jam or alternatively one or two peeled and grated raw apples.
Cover rolled out pastry with filling, roll up, place in baking tin, brush with beaten egg and prick in a few places with larding pin; allow to stand for 10 mins., then brush again with egg.
