Poppy Seed Salad Recipe
Ingredients
| Lettuce | 1 | |
| Spinach leaves | 4 | |
| 1 cucumber, peeled and diced | ||
| Green pepper | 1/2 To taste, thinly sliced | |
| Scallions | 1/2 Cup (16 tbs), chopped | |
| Sugar | 1/4 Cup (16 tbs) (Dressing) | |
| Dry mustard | 2 Teaspoon (Dressing) | |
| Lemon juice | 3 Tablespoon (Dressing) | |
| Poppy seeds | 4 Tablespoon (Dressing) | |
| White wine vinegar | 1 Cup (16 tbs) (Dressing) | |
| Olive oil | 3/4 Cup (16 tbs) (Dressing) | |
Directions
Wash lettuce and spinach thoroughly and tear into bite-sized pieces.
Combine with cucumber, pepper and scallions in a salad bowl and refrigerate while preparing the dressing.
Mix together sugar, mustard, lemon juice, poppy seeds and vinegar.
Gradually beat in the oil until the dressing is thick.
Use as much dressing as required for the salad and store the rest in a screw top jar.
