Ingredients

 Green Pepper - 1/2 no, small, seeded, chopped
 Sweet Red Pepper - 1/2 no, small, seeded, chopped
 Sweet Yellow Pepper - 1/2 no, small, seeded, chopped
 Pineapple1/2 Cup (16 tbs), chopped
 Kiwi fruit1 , peeled
 White wine vinegar1 Tablespoon
 Water1 1/2 Teaspoon
 Firmly packed brown sugar1 Teaspoon
 Root ginger1 Teaspoon, grated
 Red pepper1/8 Teaspoon, crushed
 Lemon juice1 Tablespoon
 Margarine2 Teaspoon, melted
 Salt1/8 Teaspoon (Curry Powder - 1/4 teaspoon)
 Pompano Fillets - 6 nos
 Vegetable Cooking Spray
 Sweet Yellow Pepper Strips (optional)

Directions

MAKING
1) In a medium bowl, add in green pepper, sweet red pepper, yellow pepper, pineapple and kiwi fruit. Mix and set aside.
2) In another bowl, add in the vinegar, water, sugar, ginger root and crushed red pepper. Mix well.
3) Pour the vinaigrette over the vegetable and fruit mix. Toss the mixture gently.
4) Cover the mixture and let it chill in the refrigerator for 1 hour.
5) In a small bowl, add lemon juice, margarine, curry powder and salt. Mix well.
6) Wash the salmon fillets under cold, running water. Pat the fillets dry.
7) Place the steaks on the broiler pan, that has been sprayed with cooking spray.
8) Brush the steaks with the lemon juice mixture.
9) Broil the steaks for about 8 minutes. Place the steaks about 4 to 6 inches from the heat source. Broil till the fish flakes easily.

SERVING
10) Serve the Salmon fillets on a serving platter.
11) Garnish the dish with the sweet yellow pepper strips. On the side, if desired, place 1/4 cup chilled fruit and pepper relish.
