1 In a bowl, combine mashed potatoes with 1 egg, cream and self-rising flour.
2 Mix well.
3 If the mixture is too soft, add extra flour.
4 Place all-purpose flour in a plastic bag.
5 Drop in spoonfuls of potato mixture and toss until lightly covered with flour.
6 Remove from the bag and form the mixture into balls.
7 In a bowl, mix the other egg with the water.
8 Dip potato balls in egg-water mixture.
9 Roll in flaked almonds.
10 Chill until ready to use.
11 In a frying pan, heat oil.
12 Fry balls until golden (the almonds will brown quickly).
13 Drain on paper towels and serve hot.
