Ingredients

 Long grain rice1 Cup (16 tbs), uncooked
 Salad oil1/2 Cup (16 tbs)
 Cider vinegar1/4 Cup (16 tbs)
 Soy sauce2 Tablespoon
 Sugar1 Tablespoon
 Salt1/2 Tablespoon
 Celery1 Cup (16 tbs), thinly sliced
 1/4 C thinly sliced green onion tops
 Water chestnuts1 8 Ounce, drained
 Mushrooms1 Cup (16 tbs), sliced
 Mandarin orange1 11 Ounce, drained

Directions

Cook rice according to package directions and let cool to room temperature.
Combine salad oil, vinegar, soy sauce, sugar, salt, celery, and onion.
Stir in rice.
Fold in water chestnuts, mushrooms, and oranges, just until blended.
Chill thoroughly.
Serve in lettuce lined bowl.
