Polynesian Chicken With Macadamia Nuts And Toasted Coconut Recipe

Ingredients
| 2 to 3 pounds frying chicken, cut in serving size pieces | ||
| 1 can orange juice concentrate | ||
| Cornstarch | 1 Tablespoon | |
| Lime juice | 1 Tablespoon | |
| Salt | 1 Teaspoon | |
| Cinnamon | 1/4 Teaspoon | |
| 3 bananas, peeled and sliced | ||
| Macadamia nuts | 1/2 Cup (16 tbs), chopped | |
| Coconut | 1/2 Cup (16 tbs), toasted | |
Directions
Arrange chicken in glass baking dish, skin side down with meatiest pieces toward outside.
Cover with wax paper, cook on high (9) for 10 minutes.
Turn pieces over.
Mix juice concentrate, cornstarch, lime juice, salt, and cinnamon.
Pour over chicken; continue to cook on high (9) for 10 to 12 minutes.
Add bananas and nuts, cover with wax paper.
Let stand 5 minutes before serving.
Garnish with toasted coconut.
